MightyBee is a company that immediately captured our attention. Like us, they’re Soil Association certified, and sustainability is at the heart of what they do. They describe themselves as ‘a community committed to change the way we think about, deliver and consume food, one coconut at a time.‘ We love their brand ethos, we love coconuts, and we love their dedication to bringing organic products to the UK in an ethical way. Not only that, but we particularly love their imagination.
Some would call it creativity, others would call it coconut alchemy, but somehow Mighty Bee has managed to conjure up some magical products, such as ‘coconut meat’ and ‘coconut jerky’. No meat in sight, just pure coconut goodness!
They’ve also invented the UK’s first solar-dried banana bars, and have their own version of our kitchen staple – coconut water. We can’t wait to see what products they come up with next!
So for our #SOTM July, we decided to get inventive with a slightly different product to usual; ‘spicy BBQ coconut jerky’. It’s made of coconut flesh that’s been gently dehydrated and soaked in a sundried tomato based spicy BBQ sauce.

10g MightyBee Spicy BBQ Coconut Jerky
1 Tbsp Chia Seeds
1 Tsp Lucuma

It’s a superb green healer that helps with eye health, cardiovascular health, it fights inflammation…the list goes on.
Dates may be small, but they really pack a punch. They help with digestion, they strengthen bones, promote heart health, maintain healthy skin and give you energy too.
Chia Seeds are a great source of omega-3 and fibre. They can help with weight loss and digestion, they’re good for heart health, and can lower the risk of diabetes and cardiovascular disorders.
